    These are served with afternoon tea at the Jordan Pond House in Acadia National Park in Maine... they are truly one of the most delicious things I have ever eaten....served hot from the oven with butter and strawberry jam.... heavenly!!

    List of Ingredients




    (Makes 8)
    4 Eggs
    2 Cups Milk
    2 Cups Flour
    1/2 Teaspoon Salt
    1/6 Teaspoon Baking Soda
    Butter and Strawberry Jam

    Recipe



    Preheat oven to 450F. Melt 1 � 2 tablespoons of butter and brush the inside of the muffin cups. In a mixing bowl whisk eggs. Add milk (I�ve used whole, 2%, and 1%) and blend with eggs. Add the remaining ingredients and whisk together until well blended, but do not over beat. Fill greased muffin tins 3/4 full. Bake popovers for 14 minutes at 450F. Without opening the oven door reduce heat to 350F and bake for an additional 15 minutes. The popovers should be golden brown. Remove from pans and serve with butter and jam.
