    Soak wooden skewers before BBQing to prevent burning

    List of Ingredients




    1 lb thin cut chicken cutlets
    1 heaping spoon of minced garlic
    A few squirts of Olive oil
    2 lemons (one cut in half to serve with food, one juiced)
    A few shakes oregano
    A few shakes paprika
    A small handful of fresh rosemary (snipped or finely chopped)
    A few shakes of fresh black pepper
    A few shakes of salt (we use sea salt)

    Cut chicken into long, medium wide strips. Combine ALL remaining ingredients EXCEPT LEMON JUICE. Put chicken strips in a bowl with marinade. Let sit in fridge for 15 minutes to 1/2 hour. Thread chicken onto wooden skewers (it will look like the chicken sticks you can get at a Chinese Restaurant.) Grill either on BBQ on or stove in a grill pan. Once on grill, squeeze lemon juice over!! Be sure to lightly grease the grill or pan. Turn once. These cook quickly because they're thin. Serve with white rice and very thinly sliced raw onion on top. Sprinkle with more lemon juice. Warm up some pitas (I just hold the pita on top of the burner for a few seconds) and serve. (NOTE: You don’t have to use skewers – simply place strips directly on grill)
