    12 cups tomatoes, fresh, cored -- coarsely chopped
    2 large onions -- finely chopped
    1 Tbsp cooking oil, to 2 Tbsp
    8 cloves minced garlic
    2 cans tomato paste (5.5 ounce)
    6 jalapeno peppers, to 8 -- finely chopped
    1 can canned green chilies,to 2,undrained chopped
    2 large green peppers (bell) chopped
    1/2 cup white or cider vinegar
    1 Tbsp paprika
    2 tsp sugar
    2 tsp salt
    1/2 tsp cayenne pepper powder
    1 tsp onion powder

    Core and chop fresh tomatoes to measure 12 cups

    Heat oil in heavy saucepan over medium heat. When hot, saute onions & garlic. Cook stirring often until onions have softened, 7 to 10 minutes.

    Add tomato paste, tomatoes, jalapeno peppers, chili peppers, green peppers, vinegar, paprika, sugar, salt, cilantro, cayenne and onion powder.

    Bring to a boil, stirring occasionally, until thickened, about 30 minutes. Cool to room temperature before packing in straight sided jars, freezer containers or freezer bags
