    Cajun Stew

    List of Ingredients




    1 large onion chopped
    1 large bell pepper chopped
    3 ribs of celery chopped
    4 cloves garlic minced
    1 teaspoon thyme
    1 bay leaf (maybe 2)
    2 tablespoons fresh parsley chopped
    3 whole cloves
    salt and black pepper to taste
    cayenne pepper to taste (1/2 teaspoon)
    1 28 oz can diced tomatoes
    1 6 oz can tomato paste
    4 cups of water
    1-3 tablespoons of oil (I used bacon drippings)
    2 lb smoked sausage cut into slices (Polish or
    Andoullie)
    2 lb chopped smoked ham
    2 lb shirmp small to medium(Try not ot use farm
    raised because
    they do not have the flavor of sea or gulf
    shrimp. I have been know to throw in about
    5 lbs of shrimp.)
    2 cups of uncooked rice

    In a large pot(mine holds over 3 gallons) or dutch oven add oil or bacon drippings(butter will do)

    Add sliced sausage and brown. Remove sausage
    Add onion, green pepper, and celery. Saute
    Add garlic, thyme, bay leaf, cloves, parsley, tomato paste, tomatoes, sausage, ham, cayenne, salt, pepper and water. (And other than the rice or shrimp anything I missed.)

    Mix well cover and simmer at least 25 minutes. Stiring occasionally

    I usually mix the above and let it simmer for an hour or two. Everyone comes by and tastes and offers suggestions as to what needs to be added.

    Just before ready to serve add rice and cook until tender.

    Last add shrimp and cook for about 5 minutes more.

    Serve with toasted garlic bread.

    Note: You can cook the rice in a seperate pot and then just spoon the jambalaya over the rice.
