    Barley Ham Salad - 12 - e-w

    Plan ahead�needs to chill for 2 hours
    Serves: 12

    6 c. cooked medium pearl barley
    1 c. (6 oz.) cubed fully cooked ham
    2 celery rib, diced
    1/2 c. sliced water chestnuts
    1/2 c. chopped green pepper
    1 4-oz. jar diced pimentos, drained
    1/2 c. sliced green onions
    1/2 c. sliced fresh mushrooms

    Dressing:
    1/2 c. white vinegar
    1/4 c. olive or canola oil
    1/3 c. sugar
    1 .7-oz. Italian salad dressing mix

    In a large bowl, combine the first 8 ingredients. In a jar with a tight fitting lid, combine dressing ingredients; shake well
    Pour over barley mixture and stir to coat. Cover and refrigerate for at least 2 hours, stirring occasionally.

    One 3/4-cup serving equals: 234 calories�7 gm fat (1 gm saturated)�4 gm cholesterol�185 mg sodium�38 gm carbohydrate�8 gm fiber�7 gm protein ++++ Exchanges: 2 starch�1 lean meat�1 fat ++++ WWP: 4
