    Cranberry Meatballs

    Serves: 6

    1 lb. ground round
    1 egg
    1/2 c. crushed saltines
    1/2 small onion, diced
    1/2 pepper

    1 16-oz. can whole berry cranberry sauce
    1 10-3/4-oz. can low-fat condensed tomato soup, undiluted

    Optional: Cooked rice or noodles

    In a bowl, combine the first 5 ingredients. Shape into 1-1/2-in. balls. Place on a rack in a baking pan. Bake at 400� for 20 minutes.

    Meanwhile, in a large saucepan, combine cranberry sauce and soup; heat through. Add meatballs simmer for 10 minutes. Serve over rice or noodles if desired.
