    Honey Glazed Carrots - e-w

    Serves: 6

    3 c. water
    1/8 tsp. salt
    1-1/2 lb. young small carrots with tips trimmed to 2 inches; peeled or scrubbed � or � 1-1/2 lbs. packaged peeled baby carrots
    1 T. butter
    1 T. honey
    2 tsp. finely chopped ginger

    In a large skillet, combine water and salt. Bring to boiling. Add carrots. Return to boiling; reduce heat. Cover and simmer for 10-12 minutes or just until carrots are tender. Drain carrots on paper towels and pat dry.

    In same skillet, combine remaining ingredients. Cook and stir over medium heat until butter is melted. Carefully add carrots. Cook stirring gently for 2-3 minutes or until carrots are glazed and heated through.

    One serving equals: 70 calories�2 gm fat (1 gm saturated)�5 mg cholesterol�130 mg sodium�3 gm fiber�1 gm protein +++ Exchanges: 1/2 carbohydrate�1 vegetable�1/2 fat +++ WWP:1
