    Chicken Patties w/Lemon-Mustard Sauce -- e-w
    Serves: 4

    Lemon-Mustard Sauce (recipe follows)

    1 lb. 93% lean ground chicken of turkey
    1/4 c. finely chopped onion
    1/4 c. finely chopped red or green bell pepper
    1 clove garlic, minced
    1/4 tsp. pepper

    Nonstick cooking spray
    4 lettuce leaves
    4 whole wheat pita bread rounds - or � whole grain bread toasted

    Lemon-Mustard Sauce:
    1/2 c. plain fat-free yogurt
    2 T. fat-free sour cream
    2 T. Dijon mustard
    1 small clove garlic, minced
    1/2 tsp. grated lemon peel

    Combine all ingredients in a small bowl, mix well.

    Prepare Lemon-Mustard Sauce; set aside. Combine chicken and the next 4 ingredients in a medium bowl; shape into 4 patties about 4-in in diameter and 1/2-in. thick.

    Spray large nonstick skillet with cooking spray; heat over medium heat. Add patties; cook 4 minutes. Turn patties; cook 4 minutes or until no longer pink in the center. Place lettuce leaf in pits; top with chicken and sauce.

    1 pita round w/1 lettuce leaf, 1 chicken patty and 3 T. sauce equals: 341 calories�10 gm fat (trace saturated)�29 gm protein�36 gm carbohydrate�6 gm fiber�3 mg cholesterol�493 mg sodium +++EXC: 2 starch�1/2 vegetable�3 lean meat +++WWP:6
