    Apple Wheat Muffins -- e-w
    Yield: 12

    1 c. whole wheat flour
    3/4 c. wheat bran
    1/2 c. sugar
    1-1/2 tsp. cinnamon
    1 tsp. baking powder
    1 tsp. baking soda

    1 egg
    1/2 c. reduced-fat vanilla yogurt
    1/2 c. unsweetened applesauce
    1/4 c. canola oil

    1/2 c. grated apple
    1/2 c. raisins
    1 tsp. grated orange peel

    In a bowl combine the first 6 ingredients. In another bowl whisk the next 4 ingredients. Stir into dry ingredients until just moistened. Fold in apple, raisins and orange peel.

    Coat muffin with nonstick cooking spray or use paper liners; fill three-fourths full with batter. Bake at 400� for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
