    Chive & Swiss Cheese Stratas -- w
    Plan ahead�needs to meld at least 30 minutes or overnight.
    Serves: 6

    9 slices white bread (preferable day-old)
    2 large eggs
    4 egg whites
    2 c. nonfat half-and-half
    1/2 tsp. pepper
    1-1/2 c. shredded low-fat Swiss cheese, �divided�
    1/4 c. snipped fresh chives

    Preheat oven to 350�. Lightly coat one 11 x 7-inch baking dish � or � six 1-1/2-cup individual au gratin dishes with nonstick cooking spray. Stack up 4 or 5 slices bread and cut into 1/2-inch cubes, repeat with remaining.

    Whisk the next 4 ingredients in a large bowl. Mix in 3/4 cup cheese, and then sprinkle with chives. Add bread cubes and stir until well coated with egg mixture. Cover and refrigerate at least 30 minutes or overnight. Spread mixture evenly into large baking dish or divide among au gratin dishes. Sprinkle with remaining cheese.

    Bake on middle rack until knife inserted near the center comes out clean, about 35 minutes for larger strata, 25 minutes for smaller ones. Place a foil tent, shiny side up, over strata during the last 10 minutes of baking to prevent overbrowning.
