    Lime Frozen Yogurt -- w
    Plan ahead�needs to freeze for 2-4 hours before serving.
    Serves: 6

    4 c. fat-free plain yogurt
    1-1/2 c. sugar
    2/3 c. lime juice
    2 T. grated lime peel
    1/8 tsp. salt
    1 large fresh pineapple, peeled, cored and cut into 3/4-inch wedges.

    Optional: Fresh mint

    In a bowl, combine the first 5 ingredients; stir until sugar is dissolved. Freeze in an ice cream freezer according to manufacturer�s instructions. Allow to ripen in the ice cream freezer or firm up in your refrigerator�s freezer for 2-4 hours before serving.

    Coat grill rack with nonstick cooking spray before starting the grill. Grill pineapple, uncovered, over medium heat for 2 minutes. Turn and grill 1-2 minutes longer or until heated through. Serve with lime frozen yogurt. Garnish with mint, if desired.

    One 3/4-cup frozen yogurt with 1/6 of the pineapple equals: 307 calories�trace fat (trace saturated)�3 mg cholesterol�139 mg sodium�75 gm carbohydrate�1 gm fiber�7 gm protein +++WWP: 6
