    Pizza: Garden Pizza - - e-w

    Adapted from�Cooking For 2 � V. Williams; St James. MO
    Garden Pizza � 2 - e-w

    1/2 c. chopped zucchini
    1/2 c. chopped sweet red pepper
    1/2 c. chopped sweet green pepper
    2 T. chopped onion
    2 T. chopped carrot
    1 garlic clove, minced
    2 tsp. stick margarine

    1/8 tsp. Italian seasoning
    1/8 tsp. dried oregano
    Dash pepper

    1 prebaked mini Italian bread shell (8-in.)
    1/3 c. chopped tomato
    1/3 c. shredded Italian cheese blend

    In a large skillet, saut� the first 5 ingredients in margarine for 8-10 minutes or until tender. Sprinkle with seasonings; toss to coat.

    Place crust on an ungreased baking sheet or pizza pan. Spoon vegetables to within 1/2-in, of edge. Top with tomato and cheese. Bake at 450� for 8-10 minutes or until cheese is melted.
