    Winter Vegetable Soup

    1/2 c. sliced green onions
    1 T. vegetable oil
    1 can (14-1/2 oz.) low-sodium chicken broth
    1 small potato, peeled and cubed
    1 large carrot, sliced
    1/4 tsp. dried thyme
    1 c. broccoli florets
    1/4 tsp. salt-free seasoning blend
    1/8 tsp. pepper

    In a medium saucepan, saut� onions in oil until tender. Add the next 4 ingredients; bring to a boil. Reduce heat; simmer uncovered for 5 minutes. Add remaining ingredients; simmer uncovered, for 7 minutes or until vegetables are tender.
