    Comb: Shrimp and Chicken Creole

    Yield: 6 (1 cup) servings

    1 cup chopped green pepper
    3/4 cup chopped onion
    1 teaspoon vegetable oil
    2 cups peeled diced tomatoes
    1/2 teaspoon garlic powder
    1/2 teaspoon chili powder
    1/4 teaspoon red pepper
    1/8 teaspoon pepper
    2 1/2 cups uncooked, cleaned small fresh shrimp
    1 cup chopped, cooked chicken

    Saute green pepper and onion in oil .in a large skillet until vegetables are tender. Stir in tomatoes, salt, garlic powder, chili powder, red pepper, and pepper. Bring to a boil. Reduce heat, and simmer, uncovered, 20 to 30 minutes or until mixture thickens.

    Stir in shrimp and chicken (mixture will thin when shrimp is added). Return to a boil; reduce heat, and cook 1 to 2 minutes or until shrimp turn pink.
