    Herbed Orange Roughy --e-w

    4 orange roughy�or�red snapper fillets (6 oz., each)

    1/3 c. lemon juice
    1-1/2 tsp. minced fresh parsley
    1-1/2 tsp minced fresh basil�OR�1/2 tsp. dried basil
    Pinch salt
    1/4 tsp garlic powder

    1/2 c thinly sliced fresh mushrooms, if desired
    1/8 tsp paprika

    Place the fish fillets in a single layer in a large skillet. Sprinkle with the next 5 ingredients. Place mushrooms over fish if desired. Bring to a boil; reduce heat; cover and simmer for 6-8 minutes or until fish flakes easily with a fork. Sprinkle with paprika.
