    Light Gingered Flank Steak

    Plan ahead needs to marinate for atleast 8 hours. Exchanges
    Yield: 6 servings.

    1-1/2 pounds flank steak -- lean
    1/3 cup lemon juice
    2 tablespoons honey
    1 tablespoon low sodium soy sauce
    2 teaspoons grated ginger root
    2 cloves garlic -- crushed

    Trim fat from flank steak. Cut both sides of beef into diamond pattern 1/8-inch deep.

    Place in shallow glass or plastic dish. Mix remaining ingredients; pour over beef. Cover and refrigerate at least 8 hours, turning occasionally.

    Set oven control to broil. Spray broiler pan rack with cooking spray.

    Remove beef from marinade; reserve marinade. Place beef on rack in broiler pan. Broil with top 3 inches from heat 12 to 14 minutes, turning once and brushing frequently with marinade, until desired doneness.

    Cut diagonally into thin slices.
