    Morning Glory Muffins -- e-w

    Nuts: Morning Glory Muffins

    1 c. all-purpose flour
    1 c. whole wheat flour
    3/4 c. ground flaxseed
    3/4 c. sugar
    2-3/4 tsp. baking powder
    2 tsp. cinnamon
    3/4 tsp. salt
    1/4 tsp. baking soda

    4 egg whites
    1 egg
    1/2 c. unsweetened applesauce
    1/3 c. orange juice
    1/4 c. canola oil
    2 tsp. vanilla extract

    2 c. grated carrots
    1/2 c. chopped pecans
    1/2 c. flaked coconut
    1/2 c. raisins
    1 medium tart apple, peeled and shredded

    In a large bowl combine the first 8 ingredients. In another bowl beat the next 6 ingredients. Stir into dry ingredients just until moistened. Fold in remaining ingredients.

    Coat muffin cups with nonstick cooking spray or use foil liners; fill 3/4 full. Bake at 350� for 15-18 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire racks.
