    Poppy Seed Orange Muffins

    Poppy seeds give this muffin its texture. WW Points

    Yield: 12 muffins

    1-1/2 c. unbleached white flour
    1 c.whole-wheat flour
    1 tsp. baking powder
    1/2 tsp. baking soda
    1 egg
    1 egg white
    3 T. orange juice
    2 T. poppy seeds
    1 tsp. almond extract
    1/2 c.unsweetened applesauce
    2 T. canola oil
    2 T. sugar

    Combine the flours, baking powder &soda in a medium bowl. Set aside. In a large bowl, combine the remaining ingredients. Mix well. Slowly add the dry ingredients to the large bowl and mix until blended . Do not overmix.

    Pour the batter into 12 nonstick muffin cups. Bake at 375� for 20-25 min. Remove muffins from oven and let cool slightly. Remove muffins from pan and let cool completely.
