    STREUSEL APPLE AND RAISIN MUFFINS

    Yield: 12 muffins

    - 1/2 cup brown sugar
    - 1/2 cup applesauce
    - 1/4 cup vegetable oil
    - 1 egg
    - 1 teaspoon vanilla
    - 1 cup all-purpose flour
    - 1 teaspoon baking soda
    - 1 teaspoon baking powder
    - 1/2 teaspoon cinnamon
    - 3/4 cup diced peeled apple

    Topping Ingredients:
    - 2 tablespoons brown sugar
    - 2 teaspoons all-purpose flour
    - 1/2 teaspoon cinnamon
    - 1 teaspoon margarine

    Preheat oven to 375 degrees F. Spray 12 muffin cups with nonstick vegetable spray.

    In large bowl, combine sugar, applesauce, oil, egg and vanilla until well mixed. Combine flour, baking soda,
    baking powder and cinnamon; stir into bowl just until incorporated. Stir in apple. Pour into muffin cups, filling two-thirds full.

    Topping: In small bowl, combine sugar, flour and cinnamon;
    cut in margarine until crumbly. Sprinkle evenly over muffins. Bake for 20 minutes or until tops are firm to the touch.
