    Holiday Scampi -- e
    Serves: 6

    36 medium shrimp (about 1 pound)
    1 tablespoon olive oil
    2 cups red bell pepper strips
    1 cup green bell pepper strips
    1/4 cup chopped parsley
    1 tablespoon chopped scallion
    2 cloves garlic, minced
    2 tablespoons fresh lemon juice
    2 tablespoons balsamic vinegar
    1/4 cup fresh basil leaves, finely chopped - or - 2 teaspoons dried basil
    Optional: Lemon slices and parsley sprigs, for garnish

    Shell and de-vein the shrimp, leaving the tails attached.

    In a large nonstick skillet over medium-high heat, warm the olive oil. Add the red and green bell peppers, 2 tablespoons of the parsley, the scallion, and garlic, and saute until the vegetables are tender, 4 to 5 minutes. Add the shrimp, lemon juice, vinegar, and basil, and stir-fry until the shrimp turn pink and opaque, 5 to 6 minutes. Sprinkle with the remaining 2 tablespoons parsley.

    Divide the shrimp and bell peppers evenly among six dinner plates. Garnish with lemon slices and parsley sprigs, if desired.

    One serving (6 shrimp plus vegetables) equals: 98 Calories, 12 g Protein, 3 g Fat, 5 g Carbohydrate, 86 mg Cholesterol 87 mg Sodium +++EXC: 1/2 Fat, 1 Protein, 1 Vegetable
