    MCR: Crumb-Topped Scallops - e-w
    Ready in 15 minutes or less
    Serves: 4

    1/4 c. dry bread crumbs
    1 T. stick margarine
    1 to 2 tsp. dried parsley
    1 lb. sea scallops
    6 fresh mushrooms, quartered
    1 T. low-sodium chicken broth
    1-1/2 tsp. lemon juice
    1/4 tsp. dried thyme
    1/8 tsp. garlic powder
    1/8 tsp. seasoned salt
    1/8 tsp. pepper
    Optional: lemon wedges

    In a small bowl, combine the first 3 ingredients; set aside. Place scallops and mushrooms in a 9-in. microwave safe pie plate. Combine broth and the next 5 ingredients; pour over scallops. Cover and microwave at 50% power for 2 minutes; drain.

    Sprinkle with crumb mixture. Cover and microwave at 50% power 4-1/2 minutes longer or until scallops are opaque, stirring once. Serve with lemon wedges, if desired.
