    Carrot Raisin Pilaf -- e-w

    Carrot Raisin Pilaf

    Serves: 6

    1 medium onion, chopped
    2 T. stick margarine
    2-1/2 c. water
    2 medium carrots, cut into 1-in. julienne strips
    1 c. uncooked long grain rice
    1/2 c. raisins
    1 T. chicken bouillon granules
    1/2 tsp. curry powder
    1/4 tsp. dried thyme
    1/4 c. slivered almonds, toasted

    In a saucepan, saut� onion in margarine until tender. Stir in next 7 ingredients. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until rice is tender. Sprinkle with almonds before serving.
