    Kielbasa Bean Soup

    Yield: 2 qts�..8 servings

    1 small onion, chopped
    2 garlic cloves, minced
    2 tsp. stick margarine
    2 cans (14-1/2 oz. each) reduced-sodium reduced-fat chicken broth
    1 medium potato, peeled and cubed
    1/2 lb. fully cooked turkey kielbasa�or�smoked turkey sausage, cut into 1/4-in. slices
    3 c. shredded cabbage
    1 can (15 oz.) garbanzo beans�or�chickpeas, rinsed and drained
    1 c. sliced fresh carrots
    2 T. minced fresh parsley
    1 T. white wine vinegar�or�cider vinegar
    1/2 tsp. pepper

    In a large saucepan, saut� onion and garlic in margarine until tender. Stir in broth and potato. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Stir in remaining ingredients. Return to a boil. Reduce heat; cover and simmer for 10 minutes.
