    Chicken and Broccoli Stir-Fry

    3 skinless boneless chicken breast halves, cut into thinstrips
    2 to 3 tablespoons light soy sauce
    1 tablespoon honey
    1 teaspoon sesame oil, or oil
    2 to 3 garlic cloves, minced
    1/4 cup dry sherry, or chicken broth
    1 red bell pepper, seeded, cut into strips (1 1/2 cups)
    3 cups broccoli florets
    1/4 cup water
    1 teaspoon cornstarch
    2 cups hot cooked rice


    In medium bowl, combine chicken, soy sauce, honey, sesame oil and garlic. Let stand while cooking vegetables.

    Heat sherry in large nonstick skillet over medium-high heat. Add bell pepper and broccoli; stir-fry 3 to 5 minutes. Remove vegetables from skillet with slotted spoon; keep warm.

    Add chicken mixture to same skillet; stir-fry 4 to 6 minutes or until chicken is no longer pink. Add vegetables; toss gently to combine. In small bowl, combine water and cornstarch; blend well.

    Stir into chicken-vegetable mixture. Cook and stir until
    thickened, about 1 minute. Serve with hot cooked rice.
