List of Ingredients
6 cups loosely packed frozen hash browns, thawed
2/3 cup butter or margarine, melted
2 cups cooked ham, diced -OR--browned breakfast sausage
1 cup each cheddar cheese, shredded; milk
6 - 8 eggs
1/2 tsp. salt
to taste Fresh ground pepper
1/4 cup tomato catsup
Recipe
Heat oven to 425� F. (215� C). Spray a 9x13" baking dish with oil. Press hash browns on bottom of pan. They should be at least 1/2" deep as they shrink down as crust bakes / browns. Drizzle melted butter over potatoes. Bake 25 minutes, until crisp and browned. Reduce heat to 350� F. (175� C) Sprinkle ham or sausage and cheese over crust. Beat eggs, milk and salt; pour over crust and filling. Return to oven and bake, covered, 25 - 35 minutes or until knife inserted near center comes out clean. In last few minutes of baking, uncover and add decorative squiggles of catsup to top. Makes 8 servings.
Options: Saut� onions and mushrooms with a bit of salt and pepper. Use this in place of meat in the recipe. Vegetarian sausage will also work. Replace butter with canola oil and use the whites of 4 eggs with 1 whole egg to reduce cholesterol content.
