    List of Ingredients


    • 4 skinless, boneless chicken breasts
    • 2 tsp salt
    • 1/2 tsp pepper
    • 4 Tbsp olive oil
    • 10 small white onions
    • 1/2 lb mushrooms (washed and sliced)
    • 1 10 3/4 oz can of tomato bisque soup
    • 3/4 cup dry red wine
    • 3/4 tsp oregano
    • 3/4 tsp basil
    • 2 Tbsp minced parsley
    • 10 pitted ripe olives (sliced)


    Instructions


    1. Sprinkle the chicken breast with salt and pepper and allow to stand for 5 - 10 minutes.
    2. In a large skillet saute chicken in the hot olive oil for 5 minutes.
    3. Turn over and add the onions, mushrooms and garlic. Cook 5 minutes on this side of breast.
    4. Combine the soup, wine, oregano and basil - mix well - get the lumps out.
    5. Pour the soup mixture over the chcken breasts.
    6. Bring to a boil and drop down to medium low heat and cover.
    7. Cook covered for 15 minuts on simmer or until the chicken is done.
    8. Stir in the parsley and olives.
    9. Serve over rice.
