    This one reminds me of kugel (noodle pudding), but with an Italian twist

    List of Ingredients




    5 eggs
    1 1/2 cups sugar
    1 1/2 cups ricotta
    1 cup milk
    1 tsp salt
    1 tsp vanilla
    2 tbsp. butter
    8 oz. thin egg noodles

    Recipe



    In a large bowl, beat eggs, sugar, ricotta, milk and vanilla. Mix thoroughly with wire whisk.

    Cook pasta in boiling salted water and when it is al dente drain in a colander.

    Put pasta in a bowl and toss with butter to coat.

    Add the egg/ricotta mixture to the pasta stirring it thoroughly.

    Grease a 9 x 13 casserole or baking dish and pour mixture in.

    Bake for 1 hour at 350. Let cool and then refrigerate before serving.

    Serves 16 to 18.
