    Chocolate Raspberry Crumb Bars

    Source of Recipe

    Cooke Jar Cookbook

    Recipe Introduction

Lynn (from work) made these for one of our breakfasts. She then shared the cookbook with me and I made copies of lots of great cookies.

    List of Ingredients

1 cup (2 sticks) butter or margarine
    2 cups all purpose flour
1/2 cup packed light brown sugar
    1/4 tsp. salt
2 cups (12 oz) semi sweet chocolate morsels, divided
1 can (14 oz) condensed milk
    1/2 cup chopped nuts (optional)
    1/3 cup seedless raspberry jam

    Recipe

    Preheat oven to 350. Grease 13 x 9 pan.

Beat butter in large bowl until creamy. Beat in sugar, flour and salt until crumbly.

With floured fingers, press 1 3/4 cups crumb mixture onto bottom of prepared pan, reserve remaining mixture.

Bake for 10 to 12 minutes or until edges are golden brown.

Microwave 1 cup morsels and sweetened condensed milk in medium bowl on high for 1 minute, stir. Microwave at additional 10 to 20 seconds until smooth. Spread onto hot crust.

Stir nuts into reserved mixture and sprinkle over chocolate layer.

Drop teaspoonfuls of raspberry jam onto flour mixture. Sprinkle with remaining morsels.

Bake for 25 to 30 minutes or until center is set. Cool in pan on wire rack.

    Cut into bars.

    Makes 3 dozen bars.
