Cheesy Potato Soup

List of Ingredients
1/2 cup margarine
1/2 cup finely chopped onions
1/2 cup finely chopped celery
2 Tbsp. cornstarch
1 qt. warm milk
1 cup grated cheddar cheese
2 Tbsp. finely chopped parsley
4 to 5 potatoes, chopped
1/2 cup finely chopped carrots
1/2 cup flour
1 qt. chicken broth
1/8 tsp. soda
salt and pepper to taste
Melt margarine in large pot. Add potatoes, onions, carrots and celery and saut� until soft. Add flour and cornstarch and stir well. Add chicken broth and milk. Cook, stirring constantly until mixture has a velvety texture and thickens. Add soda and cheese and stir. Season with salt and pepper. Add parsley a few minutes before serving.
