Stuffed Zucchini

List of Ingredients
2 medium to small zucchini -It's best to use a smaller squash for stuffing.
1 T olive oil
� C red onion, finely chopped
� C red pepper or yellow pepper
� C scooped zucchini
� C mushrooms, chopped
1 T fresh garlic
� C dry white wine
� C heavy cream
� C Parmesan cheese
1 C fresh bread crumbs
Recipe
Cut zucchini lengthwise and scoop.
Prepare all chopped vegetables.
In saut� pan with olive oil, heat and saut� onions, pepper, squash, mushroom, garlic and season with salt and pepper.
Add white wine and heavy cream.
Reduce over heat 2 or 3 minutes. Remove and stir in bread crumbs and cheese.
Fill squash boats with filling.
Bake in covered dish for 20 minutes at 350� topped with additional cheese.
Serve as a side dish along with your favorite dish.
