    This recipe won First Prize at the Tennessee State fair (year unknown) by Jean Duke's Aunt Nancy Todd.


    List of Ingredients


    • 2 cups Sugar
    • 4 Eggs
    • 1 1/2 cups Oil
    • 3 teaspoons Cinnamon
    • 2 teaspoons Soda
    • 1 teaspoon Salt
    • 2 cups Flour
    • 3 cups Carrots ( grated)
    • 1/2 cup chopped Pecans
    • Icing for Carrot Cake
    • Philadelphia Cream Cheese Icing For Aunt Nancy's Carrot Cake.UMMMM Good.
    • 1 stick Margarine
    • 8 ounces Cream Cheese
    • 1 box Powdered Sugar
    • 1 cup Pecans (Chop and stir in)


    Instructions


    1. Directions: Mix Eggs, Sugar and Oil. Set aside.

      Mix rest of ingredients and stir in above mix. Stir in Carrots. Bake 33 minutes at 325 degrees.

      Number Of Servings: About 12 Preparation Time: About one hour

    2. Icing Directions:Directions: Blend above ingredients to a creamy constistancy.

      1 cup whole Pecans for decoration if desired. Also a Cherry can be used for decoration.

      Preparation Time:15 minutes
