My Favorite Pot Roast

3 lb. boneless roast
1 enve. Lipton Onion Soup Mix
water
1 medium onion, chopped
pepper
6-7 medium potatoes, peeled and cut
1 small bag carrots, peeled and cut
all-purpose flour Recipe
In a large pot, brown the roast over medium-high heat.
Add enough water to just cover the roast.
Blend the soup mix with two cups water and add to the pot.
Add the onion and bring to a boil over high heat.
Reduce heat to low-medium and simmer, covered, for 4 hours, turning the meat over every half hour.
Add water as needed. Also add pepper and any other spices you'd like.
After the 4 hours are up, add the potatoes and carrots and cook until they are tender.
Remove the roast and vegetables (you can put them in a large baking dish). Leave all the liquid in the pot.
To make the gravy, blend 1 cup water with enough flour to make a thick soupy mixture and stir this into the liquid in the pot.
Bring to a boil over high heat. Reduce heat to low and simmer, uncovered, stirring constantly, until the gravy is thickened.
Pour the gravy over the meat and vegetables in the pan and enjoy!
Note - Actually, I think this is even better the second day, as a leftover!
