    List of Ingredients




    3 chicken breasts
    1 sliced egg plant
    1 egg
    10-1/2 oz can of pizza sauce
    1 tsp of salt
    6 slices of good quality mozzarella cheese
    1 tsp of pepper
    1 cup of dry bread crumbs
    1/2 cup of butter
    Grated Parmesan cheese

    Recipe



    Cut chicken breasts into halves. In a bowl beat the egg, salt and pepper. In a separate bowl put bread crumbs. Dip chicken pieces into the egg, then coat chicken with the bread crumbs.


    In crock pot with a browning unit, saut� chicken in the butter (if your crock pot does not have a browning unit, simply saut� chicken in a skillet). Put eggplant on the bottom of the crock pot and place browned chicken on top. Pour pizza sauce over the chicken. Cover and cook on LOW for 6-8 hours.

    Add mozzarella cheese and sprinkle Parmesan cheese on top. Cover and cook for an additional 15 minutes on LOW.
