    1 tsp olive oil
    1 chopped medium onion
    4 crushed clove garlic
    1/4 tsp cayenne pepper
    2 small can chopped clams
    1/3 cup evaporated skim milk
    1/4 chopped cup Italian flat-leaf parsley

    Recipe



    1. Heat the olive oil in a nonstick saucepan and add the onion, garlic and cayenne. Saut� over medium heat for about 10 minutes.

    2. Add the clams with their liquid and the evaporated skim milk and bring to a simmer. Simmer until the sauce reduces and thickens slightly, about 10 minutes.

    3. Stir in the parsley. Serve over pasta. Serves 3.
