    Here are the recipes for our five favorite cookies.

    NOTES: These are made for use in a larger mixer -- I have a Bosch and love it -- use it daily, especially for large batches. With the Bosch I do not spend time creaming butter and sugar together. I put everything in the mixer and use the dough hooks to mix it all up. I do start with softened butter (I use butter in nearly every recipe rather than the
    shortening) so it mixes in easily.

    Couple shortcuts -- I use a potato masher to criss cross my peanut butter cookies -- a neat design and only one step. The 1" scoop is a great timesaver and keeps everything uniform and the kids love using it. They can be scooping while I'm measuring ingredients for the next batch or cleaning up. I usually put the first batch in the oven frozen while the oven is
    preheating. It takes a couple minutes longer, but saves on the heat.

    BIG BATCH COOKIES

    (Made for Bosch mixer -- up to 12 cups flour -- makes up to 10 dozen 1� cookie balls

    I make them in the following order. I can fit one batch of dough balls on two 13x17 baking sheets. They will freeze solid while I am mixing the next type of dough.

    I do them in the following order so I don�t have to wash out my mixer between batches.

    Kansas Sugar Cookies

    2 c butter
    4 c sugar
    4 eggs
    2 c oil
    12 c flour
    4 t soda
    4 t cream of tartar
    4 t vanilla

    Mix all ingredients together
    Scoop in 1� balls
    Flash freeze
    Bag

    Place on greased pan. Thaw while oven preheats or place in warming oven. Flatten with glass dipped in sugar. Bake 10-12 minutes at 350 These make excellent rolled cookies � roll out using powdered sugar instead of flour and they don�t get tough.

    Oatmeal Cookies

    3 c shortening (I use � butter)
    4 c brown sugar
    2 c sugar
    4 eggs
    1 c water
    4 t vanilla
    4 c flour
    4 t salt
    2 t soda
    12 c oatmeal

    Mix all ingredients together
    Scoop in 1� balls
    Flash freeze
    Bag

    Place on greased pan. Thaw while oven preheats or place in warming oven. Bake 10-12 minutes at 350

    Chocolate Chip Cookies
    2 c shortening (I normally use all butter for these cookies)
    � c butter
    2 c sugar
    2 c brown sugar
    4 eggs
    4 t vanilla
    6 c flour
    2 t salt
    2 t soda
    4 c chocolate chips

    Mix all ingredients together
    Scoop in 1� balls
    Flash freeze
    Bag

    Place on greased pan. Thaw while oven preheats or place in warming oven. Bake 10-12 minutes at 350

    This is a good basic dough to use for a variety of cookies � white chocolate, add nuts or toffee chips, raisin, craisins� or even just plain � my favorite!

    Peanut Butter Sensations

    4 c peanut butter (I use chunky)
    3 c sugar
    2 c brown sugar
    2 c butter
    4 T milk
    4 t vanilla
    4 eggs
    5 c flour
    3 t soda
    2 t baking powder

    Mix all ingredients together
    Scoop in 1� balls
    Flash freeze
    Bag

    Place on greased pan. Thaw while oven preheats or place in warming oven. Lightly Press down with potato masher. Bake 10-12 minutes at 350


    Gingersnaps
    3 c shortening (I use � butter)
    4 c brown sugar
    4 eggs
    1 c molasses
    8 c flour
    1 t salt
    8 t soda
    4 t each � ginger, cinnamon, cloves

    Mix all ingredients together
    Scoop in 1� balls
    Flash freeze
    Bag

    Roll each ball in sugar. Place on greased pan. Thaw while oven preheats or place in warming oven. Bake 10-12 minutes at 350
