    ~Mackerel: Country Breakfast~

    List of Ingredients

    1 can mackerel, drained, cleaned and flaked**
    1 medium onion, finely chopped*
    1 egg
    1 teaspoon Old Bay Seasoning
    1 teaspoon black pepper
    1 Tablespoon onion powder
    1 pack Sazo'n seasoning
    1/2 cup flour
    oil


    Recipe

    Mix all of the above ingredients in bowl and make small patties.

    Heat about 1/2 inch of oil in medium skillet until hot. Place patties in hot oil and fry until lightly crispy on each side.

    Meanwhile have white rice cooking while frying patties. Drain patties on paper towels. Serve patties with rice, hot homemade biscuits and your favorite syrup, jelly or jam.

    *You can use a small onion, but I love lots of onions.

    **You can use Pink Salmon for this also.

    This is another one of my Grandmother's Southern Breakfast on Sunday Morning just before we left for church.
