    Makes 6 patties at 4.5 points each

    List of Ingredients




    1 (15 to 16 oz) can salmon
    1/4 cup egg beaters
    1/3 cup minced onion
    1/2 cup flour
    1 1/2 teaspoon baking powder
    2 tablesoon oil

    Recipe




    Drain salmon; set aside 2 tablespoons of the juice. Mix salmon, egg and onion until sticky. Stir in flour; add baking powder to salmon juice. Add to salmon mixture. Form into 6 patties; put oil into skillet; heat until hot; put patties into skillet.

    Cook the patties until they are golden brown (will only take a very few minutes since the skillet is hot). Turn the patties, lower the cooking temp to low and cover. Cook for about 7 minutes then turn again and cook until done. Keep covered. This method allows both sides to cook in some oil and develop a light crispy outside texture
