    Pulled Pork Hash

    This is a sharecropper's recipe,serve for breakfast and make with leftover barbecue.


    1 pound pulled pork (shoulder, butt or ``pig-pickin' '' style)

    1 pound cooked, cold potatoes (new potatoes are best)

    2 ounces bacon drippings or lard

    1 medium onion, finely chopped

    8 ounces cooked cabbage, turnip greens, mustard greens or collard sprouts, chopped

    Salt and freshly ground black pepper to taste
    Finely chop the potatoes and crush slightly. In a 10-inch nonstick skillet, melt half the fat and lightly fry the onion. Mix in the pork, potatoes and greens and season well. Add more drippings, dotting around the top. Press down from the center outward to form a cake in the pan and fry over moderate heat until browned underneath.

    Spray a plate with nonstick cooking spray and use the plate to turn the cake over and slide it back into the frying pan. Add the last of the drippings to the top of the cake and allow it to continue to cook until medium brown on the bottom. Slide out of the pan and let cool for 5 minutes. Slice into 8 pieces and served with a sunny-side-up egg on top.
