    Here's a very different recipe for a cream pie that a friends mother makes. I've never seen the recipe in any cookbook and thought I had lost this until recently. I once read an artical about the regional differences in pies. This is a very old family recipe that has been updated for using the microwave. It is from the central Illinois farm area.


    Aileen's Cream Pie

    4 egg whites
    1 C sugar
    2 C whole milk
    3 Tabsp flour
    1 tsp vanilla
    Nutmeg (for top of pie)
    1 pre baked pie shell

    These are microwave directions but you can also do everything on the stove.

    Beat egg whites until stiff.
    Combine sugar and flour.
    Bring milk to a boil in a large bowl or pan.
    Fold the sugar and flour into the beaten egg whites then fold this mixture into the boiled milk.
    Cook in microwave until thick, add vanilla.
    Pour into baked pie shell and sprinkle with nutmeg.

    Note: When cooking this in the microwave stir every 2 to 3 min. in the beginning and more often as it gets hotter. Don't overcook in the microwave or it can get rubbery, but don't undercook as it will not thicken.
    Aileen always makes this in the microwave, but I like doing it on the stove better, remember to stir often on the stove though.
