    Italian Beef


    Title: Italian Beef
    Categories: meat
    Yield: 14 servings

    10 lb Round or rump roast 1 tb Oregano
    1/2 c Vinegar 1 sm Onion,diced
    2 tb Worcestershire sauce Salt
    1 cl Garlic,minced Pepper

    Brown the meat in a little oil until brown on all sides. Put in roasting pan. Mix vinegar,2 tbsp. Worcestershire sauce,1 tbsp. oregano and the garlic. Pour over seasoned meat,slicing onion on top.Cover tightly with foil;
    roast @275- 300 degrees 3 or more hours or until fork tender. Slice when cool.


    SAUCE:
    7 3/4 c Water 1or 2 pk Italian Dressing Mix (depending on how strong you like the flavor)
    3 Beef bouillon cubes 2 ts Basil
    8 tb Worcestershire sauc 1 pk Au Jus Mix
    4 ts Oregano 1/2 to 1 jar of Pepperoncini peppers (depending on taste)


    Combine sauce ingredients & bring to a boil. Put sliced meat into a crock pot & add sauce & Pepperoncini peppers. Heat on low for a few hours.

    Serve on poorboy or Hoagie buns, making sure that you serve some sauce along with the meat. May be refrigerated 2 to 3
    days. Makes 10 to 16 servings.

    I alway bake the meat at least 1 day ahead, put it in the crock pot with the sauce & refrigerate it until ready to heat. This helps to increase the flavors.
