    Sweet Potato Bran Muffins

    List of Ingredients

    1c. sweet potato puree
    3 egg whites
    3/4 c. nonfat yogurt
    1/3 c. molasses

    1/3 c. brown sugar, very lightly packed
    1 1/4c. whole wheat flour
    1 c. wheat bran
    2 tsp. baking powder
    1/2 tsp. baking soda
    1 tsp. cinammon
    1 tsp. ginger


    Mix the wet ingredients and the dry ingredients seperately. Fold the wet into the dry, stir until moistened. Dough will be pretty dense. Fill 12 muffin cups, i use liners, but you could also grease the muffin pan. Bake at 400 degrees for 25-30 minutes. Toothpick will come out clean when done.

    I've also made these with peach puree, and I think they'd be good with pumpkin too.
