    1/4 cup olive oil
    1/2 cup plain low-fat yogurt
    3/4 cup unbleached flour
    1/2 cup whole wheat pastry flour
    1/8 teaspoon salt


    Preaheat oven to 400 degrees. In a large bowl, combine the oil and yogurt,
    mixing well. In a separate bowl, combine the flours and salt. Stir into the oil-yogurt mixture, 1/4 cup at a time, until well combined. Roll the mixture into a ball and flatten it into a thick pancake. Wrap in waxed paper and refrigerate 20 minutes. Between two sheets of waxed paper, roll
    the chilled dough into a large circle. Transfer dough into a 9" pie plate
    and chill for 15 minutes. Add pie filling of your choice and bake according to directions.

    *NOTE: To bake unfilled, preheat oven to 400 degrees. Prick crust on bottom and sides with a fork. Bake for 15 or 20 minutes or until golden brown. Cool before adding filling.
