Austrian Green Beans

List of Ingredients
2 Cups green beans, cleaned and cut into 1 inch pieces
2 Cups of water
2 Tablespoons finely chopped onions
2 Tablespoons red wine vinegar
1 Tablespoon vegetable oil
1 teaspoon salt
1 Dash pepper
In a 1-quart saucepan combine green beans and water and bring to a boil. Reduce heat and let simmer until beans are tender, about 10 minutes. Drain beans and transfer to medium bowl; add remaining ingredients and toss until thoroughly coated. Cover with plastic wrap and refrigerate until chilled; toss again just before serving.
This last for about a week in the frig. It is a great way to get in veggies in the summer. We had this the first time we went to Austria.
