Sausage Cheese Soup

A smooth and creamy soup that will warm everyone up and have them asking for seconds!
List of Ingredients
1 pound Bob Evans Original Recipe Roll Sausage
1 package (20 oz.) Bob Evans Diced Home Fries 20 oz
1 medium carrot, chopped
1 small onion, chopped
1/4 cup flour
1 can reduced sodium chicken broth (14 oz)
1 1/2 cups whole milk
2 cups shredded sharp Cheddar cheese (8 oz)
1 cup shredded Swiss cheese (4 oz)
In a large saucepan over medium heat, crumble and cook sausage, potatoes, carrot, and onion until sausage is brown and vegetables are softened. Sprinkle flour into the pan.
Cook, stirring frequently, 1 - 2 minutes. Gradually stir in broth and milk. Cook, stirring occasionally, until soup comes to a boil. Reduce heat to low and simmer for 10 minutes or until potatoes are tender. Remove from heat and gradually stir in cheese. Stir until the cheese is melted and smooth.
I forgot to buy the Diced home fries so I just diced up regular potatoes and let it cook in the soup until they were tender.
