    Recipe Introduction


    We have tried many bread recipes only to turn out with flat, hard bread not really worth eating. But this bread turns out so good that we actually want to eat it, and it is also very easy to make!

    Makes 4 or 5 loaves.


    List of Ingredients


    • 5 cups hot tap water
    • 2/3 cup honey
    • 2/3 cup oil
    • 2 tablespoons salt
    • 3 tablespoons yeast
    • 14-16 cups freshly ground whole wheat flour
    • 3 tablespoons natural magic dough enhancer


    Instructions


    1. Grind 10 cups of whole wheat in mill on medium coarse.
    2. Combine water, honey, oil, salt, yeast, and 9 cups of flour.
    3. Mix slowly (on low speed if in a mixer) and add flour slowly until the dough begins to clean the sides of the bowl. Flour amount will vary due to humitity and the protein and moisture content of the wheat. A stickier dough will make a more moist bread.
    4. Knead slowly for 10 minutes (on low speed if in mixer).
    5. Oil hands. Remove dough from mixer 1/4 (or 1/5) at a time. Mold into loaves. Place in pans greased with oil and lecithin. Cover loaves with a clean cloth and let rise for 30 minutes or until amost doubled.
    6. Bake at 350 degrees for 30 minutes. Remove from pans and place on rack to cool.
    7. Slice and enjoy with butter or honey while still warm!
