Zucchini Tomato Casserole

� cup oil
1 clove garlic, finely minced
4 medium zucchini, cut into � inch slices
� tsp oregano
� tsp basil
� cup cheddar cheese, grated
4 medium tomatoes, peeled and sliced
Salt and pepper to taste
� cup breadcrumbs
2 tbsp butter, melted
Recipe
Preheat oven to 350 F. Heat oil in skillet, add minced garlic and cook 5 to 6 minutes until oil is flavored. Remove garlic and saut� zucchini slices in flavored oil until just tender. Combine oregano, basil and cheddar cheese. Place alternate layers of zucchini and sliced tomatoes in a buttered 1 � quart casserole dish. Sprinkle each layer lightly with salt, pepper and cheese mixture. Combine breadcrumbs with melted butter; sprinkle on top of the casserole. Bake, uncovered, until the crumbs are browned, about 20 to 25 minutes.
