Apple Streusel Coffee Cake

Cake
1/4 cup of CRISCO Shortening
1/2 cup of sugar
2 egg whites
1 teaspoon of vanilla
3/4 cup of dry oat bran high fiber hot cereal
1 cup of chunky applesauce
1 1/4 cups of all purpose flour
1 1/2 teaspoons of ground cinnamon
1 teaspoon of baking powder
3/4 teaspoon of baking soda
1/4 teaspoon of salt, optional
1/4 teaspoon of ground nutmeg
Filling and Topping:
1 cup of chunky applesauce, divided
1/4 cup of sugar
1/4 teaspoon of ground cinnamon
Heat oven to 375�F. Grease a 8 inch square pan. For cake: Combine the CRISCO and 1/2 cup of sugar in medium bowl with fork until blended and crumbly. Add egg whites and vanilla. Bat until fairly smooth. Stir in oat bran, then 1 cup of applesauce. Let it stand for 5 minutes. Combine the flour, 1 1/2 teaspoons of cinnamon, baking powder, baking soda, salt, and nutmeg in another bowl. Stir into oat bran mixture. spread half of batter in pan. Filling & Topping: Spread 3/4 cup of applesauce over batter. Combine 1/4 cup of sugar and 1/4 teaspoon of cinnamon. Sprinkle half over applesauce. Add remaining batter, spread gently and evenly. Top with remaining 1/4 cup of applesauce. Spread thinly and evenly. Sprinkle with remaining sugar cinnamon mixture. Bake at 375�F. for 30 to 35 minutes or until top is golden brown and center springs back when touched lightly. Cut into squares. Serve warm
