    Carrot Cake with Lemon Cheese Frosting

    List of Ingredients




    2 cups of flour
    2 teaspoons of cinnamon
    2 teaspoons of baking soda
    1/2 teaspoon of salt
    2 cups of sugar
    3 eggs
    3/4 cup of buttermilk
    3/4 cup of salad oil
    2 teaspoons of vanilla
    2 cups of finely grated carrots
    1 cup of chopped nutmeats
    1 cup of drained pineapple
    1 cup of shredded coconut or 1 cup of golden raisins

    Frosting:

    1 - 1 1/2 pounds of powdered sugar
    8 ounces of cream cheese
    1/2 stick of butter
    2 teaspoons of vanilla or 1 tsp. lemon essence
    1/2 cup of chopped nutmeats

    Sift together dry ingredients. Add liquids; stir together. Add the remaining ingredients and mix together. Bake in a greased and floured 9x13 inch pan at 325�F. for 55 minutes or until it tests done. Frost when cool. Soften butter and cream cheese. Mix together. Add essence, then sugar gradually, until desired consistency.
