Shoemaker Styled Chicken

List of Ingredients
One 2 /12 to 3 pound chicken, quartered
2 tablespoons of olive oil
3 tablespoons of butter
Salt and pepper to taste
1 clove garlic, peeled and minced
2 tablespoons of chopped scallion
1 cup of sliced mushrooms
1/2 teaspoon of tarragon
1/2 cup of chicken broth
1/2 cup of white wine
1/4 pound of chicken livers
1 tablespoon of chopped parsley
Cut each chicken quarter into 3 or 4 parts. Cut each wing or thigh in half. Heat the oil and 2 tablespoons of butter in large skillet over moderate heat. Add chicken and saut� until browned. Season with salt and pepper. remove from the pan. Add the garlic, scallions, and mushrooms to skillet and saut� for 5 minutes. Add tarragon, broth, wine and chicken. Bring to a boil, then cover and simmer for 30 minutes. Melt the remaining butter in small frying pan. Add the livers and saut� for 5 minutes. Add the livers to the chicken and simmer for 5 minutes longer. Garnish with parsley, and serve. Serves 4
