    1/2 lb. beef
    2 Tbs. vegetable oil
    1 clove garlic, finely chopped
    1 onion, thinly sliced
    1 to 2 eggs, lightly beaten
    3 cups cooked rice
    1 tomato, quartered
    1 Tbs. tomato sauce
    1/2 to 1 Tbs. fish sauce
    1 cucumber, thinly sliced
    green onions

    Recipe



    Thinly slice beef into 2-inch strips. In a wok, heat oil on medium heat and cook garlic until light brown. Stir in beef, onion and eggs. Increase heat to high and stir-fry for 4 to 5 minutes, or until beef is cooked. Add rice, tomato, tomato sauce and fish sauce and stir-fry for 2 minutes. Serve with sliced cucumber. Garnish with green onions and Chinese parsley.
